{"id":11648,"date":"2016-11-08T14:25:24","date_gmt":"2016-11-08T14:25:24","guid":{"rendered":"http:\/\/blogs.funiber.org\/pt\/?p=11648"},"modified":"2016-11-09T14:30:53","modified_gmt":"2016-11-09T14:30:53","slug":"funiber-sementes-morango-antioxidantes","status":"publish","type":"post","link":"https:\/\/www.funiber.blog\/pt\/saude-e-nutricao\/2016\/11\/08\/funiber-sementes-morango-antioxidantes","title":{"rendered":"Sementes de morango t\u00eam 81% dos antioxidantes da fruta"},"content":{"rendered":"<h2><strong>Pesquisadores identificaram que as sementes t\u00eam mais antioxidantes que a polpa dos morangos<\/strong><\/h2>\n<p>Pesquisadores do Instituto de Pesquisa e Forma\u00e7\u00e3o Agr\u00e1ria e Pesqueira (Ifapa) da Junta de Andaluzia, na Espanha, em colabora\u00e7\u00e3o com as Universidades de Vigo e da Regi\u00e3o das Marcas, na It\u00e1lia, realizaram um estudo em que se determinou que 81% dos antioxidantes dos morangos se encontram nas sementes.<!--more--><\/p>\n<p>Para este estudo, os cientistas realizaram em laborat\u00f3rio a simula\u00e7\u00e3o de uma digest\u00e3o, procurando quantificar a fra\u00e7\u00e3o de antioxidantes que a fruta libera no est\u00f4mago e no intestino.<\/p>\n<p>Os pesquisadores indicaram que as sementes constituem 7,5% do peso da fruta, e por essa raz\u00e3o resulta chamativo descobrir que as sementes t\u00eam grande poder antioxidante.<\/p>\n<p>Foi feito um estudo de bioacessibilidade para comprovar os componentes que estas frutas liberam no est\u00f4mago, e, por outro lado, de biodisponibilidade para conhecer quais s\u00e3o os componentes que passam \u00e0 corrente sangu\u00ednea, de acordo com o indicado por Mar\u00eda Teresa Ariza, da \u00e1rea de Gen\u00f4mica e Biotecnologia da Ifapa.<\/p>\n<p>Neste experimento, introduziu-se em um copo de precipita\u00e7\u00e3o uma amostra de morangos com sementes e \u00e1gua, para em seguida medir o ph ou grau de acidez e reduzi-lo at\u00e9 alcan\u00e7ar um ph de 1,8, que \u00e9 um n\u00edvel similar ao registrado no est\u00f4mago em jejum. Logo, foi adicionado pepsina \u00e0 combina\u00e7\u00e3o, uma enzima que atua no processo de digest\u00e3o dos alimentos.
