Durante a reda\u00e7\u00e3o e o debate, diversos pa\u00edses membros buscaram o consenso mais amplo sobre o c\u00f3digo.<!--more--><\/p>\n<p>Com o documento, espera-se conseguir o n\u00edvel mais baixo poss\u00edvel de toxinas na alimenta\u00e7\u00e3o, aplicando boas pr\u00e1ticas nas diversas etapas da cadeia alimentar. A produ\u00e7\u00e3o, a elabora\u00e7\u00e3o, o envolt\u00f3rio e a distribui\u00e7\u00e3o dos alimentos requer sistemas complexos, que podem demorar longos per\u00edodos de tempo, e passar por diversos estabelecimentos.<\/p>\n<p>Este longo procedimento pode gerar micotoxinas, que s\u00e3o as toxinas de fungos produzidas pelo metabolismo secund\u00e1rio de g\u00eaneros como <em>Aspergillus, Fusarium y Penicillium. <\/em>Estas toxinas podem causar danos \u00e0 sa\u00fade dos humanos e dos animais.<\/p>\n<p>O C\u00f3digo de Pr\u00e1ticas aprovado inclui uma s\u00e9rie de boas pr\u00e1ticas de acordo com a etapa de elabora\u00e7\u00e3o do alimento para consumo:<\/p>\n<ul>\n<li><strong>Boas Pr\u00e1ticas Agr\u00edcolas<\/strong><\/li>\n<li><strong>Boas Pr\u00e1ticas de Fabrica\u00e7\u00e3o<\/strong><\/li>\n<li><strong>Boas Pr\u00e1ticas de Armazenamento<\/strong><\/li>\n<\/ul>\n<p>A organiza\u00e7\u00e3o do encontro foi realizada de maneira conjunta entre a Organiza\u00e7\u00e3o das Na\u00e7\u00f5es Unidas para Alimenta\u00e7\u00e3o e Agricultura (FAO) e a Organiza\u00e7\u00e3o Mundial da Sa\u00fade (OMS). A presidente da <a href=\"http:\/\/www.fao.org\/fao-who-codexalimentarius\/about-codex\/en\/\" target=\"_blank\" rel=\"noopener\">Comiss\u00e3o do Codex<\/a>, Awilo Ochieng Pernet, felicitou a todos pelo empenho com o trabalho e a elabora\u00e7\u00e3o do documento resultante.<\/p>\n<p><strong>Como aparecem as micotoxinas nos alimentos?<\/strong><\/p>\n<p>Estas subst\u00e2ncias produzidas por v\u00e1rias esp\u00e9cies de mofo podem crescer sobre os alimentos, dependendo das condi\u00e7\u00f5es de humidade e temperatura. Eles se desenvolvem de forma natural a partir do metabolismo de alguns g\u00eaneros de fungos. Geralmente, a produ\u00e7\u00e3o ocorre em temperaturas entre 24\u00baC e 28\u00baC, pr\u00f3prias de ambientes tropicais.<\/p>\n<p>H\u00e1 micotoxinas que se formam durante o cultivo, outras se desenvolvem na colheita e tamb\u00e9m na fase de armazenamento. Uma vez presentes no alimento, n\u00e3o h\u00e1 maneira de descontaminar.<\/p>\n<p>Se consumida por humanos, podem causar diversos efeitos como por exemplo, indu\u00e7\u00e3o ao\u00a0 c\u00e2ncer, problemas gastrointestinais ou nos rins. Para algumas micotoxinas, as ag\u00eancias que regulam a seguran\u00e7a dos alimentos estabelecem valores de refer\u00eancia toxicol\u00f3gicos. Mas h\u00e1 algumas que ainda n\u00e3o se sabe ao certo o perigo, por falta de dados.<\/p>\n<p>Alguns alimentos sem processar que s\u00e3o suscept\u00edveis \u00e0 contamina\u00e7\u00e3o s\u00e3o: cereais, leguminosas, frutas, verduras, frutos secos, caf\u00e9, cacau e esp\u00e9cies.
