Representa 80% das prote\u00ednas do trigo, sendo composta por uma s\u00e9rie de prolaminas, gliadina e glutenina, que s\u00e3o as respons\u00e1veis por contribuir com elasticidade das massas, mas que s\u00e3o tamb\u00e9m causadores de patologias como a doen\u00e7a cel\u00edaca.<\/p>\n<p><!--more--><\/p>\n<p>Hoje em dia, a dieta sem gl\u00faten de um cel\u00edaco representa importantes restri\u00e7\u00f5es j\u00e1 que n\u00e3o se pode comer nada que contenha ou tenha estado em contato com trigo, centeio, cevada ou aveia. Al\u00e9m disso, uma das principais queixas deste setor \u00e9 o alto pre\u00e7o dos produtos sem gl\u00faten e das diferentes texturas com respeito aos produtos sem esta subst\u00e2ncia.<\/p>\n<p>Os pesquisadores do grupo de <a href=\"http:\/\/www.ias.csic.es\/mejora-genetica-vegetal\/biotecnologia-vegetal\/\" target=\"_blank\" rel=\"noopener\">Biotecnologia Vegetal do Instituto de Agricultura Sustent\u00e1vel (IS) de C\u00f3rdoba<\/a>, Espanha, realizaram um estudo com o qual conseguiram reduzir entre 95% e 98% a quantidade de gliadinas deste trigo transg\u00eanico. Criaram, assim, uma mat\u00e9ria-prima apta para o consumo de cel\u00edacos e com um custo menor. O objetivo do estudo foi avaliar a seguran\u00e7a da farinha de trigo com redu\u00e7\u00e3o de gliadinas (denominada E82).<\/p>\n<p>Os cientistas confirmaram depois de testes realizados em ratos alimentados com esta nova variedade de trigo que n\u00e3o cont\u00e9m gl\u00faten e que n\u00e3o existe nenhuma contraindica\u00e7\u00e3o para seu consumo. O estudo durou 90 dias e foram utilizados 50 machos e 50 f\u00eameas de ratos alimentados com dose de 1,42, 2,83 e 5,67 g\/kg\/dia da linha transg\u00eanica E82.
