A pesquisa indica que atualmente o alimento apresenta n\u00edveis mais baixos de quatro vitaminas B, em compara\u00e7\u00e3o com o arroz do final do s\u00e9culo XXI.<!--more--><\/p>\n<p>Os pesquisadores alertam ainda que o aumento de CO2 poder\u00e1 levar \u00e0 perda de prote\u00ednas, ferro e zinco no arroz nos pr\u00f3ximos anos. O professor <a href=\"http:\/\/epi.washington.edu\/faculty\/Drewnowski-Adam\" target=\"_blank\" rel=\"noopener\">Adam Drewnowski,<\/a> da Universidade de Washington e um dos autores do estudo, afirmou que \u201co efeito poderia ser devastador nos pa\u00edses consumidores de arroz, onde cerca de 70% das calorias e a maioria dos nutrientes s\u00e3o provenientes\u201d deste cereal.<\/p>\n<p>Para chegar a estas conclus\u00f5es, uma equipe formada por pesquisadores experimentou plantar 18 variedades comuns de arroz, em campos no Jap\u00e3o e na China, em atmosferas control\u00e1veis que simulavam diferentes concentra\u00e7\u00f5es de CO2. Foram simuladas as emiss\u00f5es em condi\u00e7\u00f5es clim\u00e1ticas de meados do s\u00e9culo passado (568 a 590 partes por milh\u00e3o em compara\u00e7\u00e3o com os 400 ppm da atualidade).<\/p>\n<p>Os n\u00edveis de ferro, zinco, prote\u00ednas e vitaminas B1, B2, B5 e B9 diminu\u00edram em propor\u00e7\u00f5es variadas. \u201cAs pessoas dizem que mais CO2 \u00e9 alimento de plantas, e \u00e9. Mas como as plantas respondem a esse aumento s\u00fabito de alimentos ter\u00e1 impacto tamb\u00e9m na sa\u00fade humana, de d\u00e9ficits nutricionais, etno-farmacologia e alergias sazonais a p\u00f3len \u2013 de maneiras que ainda n\u00e3o entendemos\u201d, disse <a href=\"https:\/\/www.ars.usda.gov\/northeast-area\/beltsville-md-barc\/beltsville-agricultural-research-center\/adaptive-cropping-systems-laboratory\/people\/lewis-ziska\/\" target=\"_blank\" rel=\"noopener\">Lewis Ziska<\/a>, um dos autores do estudo.<\/p>\n<p>Ele destaca ainda que \u201credu\u00e7\u00f5es na qualidade nutricional do arroz podem afetar a sa\u00fade materna e infantil de milh\u00f5es de pessoas\u201d, especialmente das popula\u00e7\u00f5es asi\u00e1ticas e africanas que t\u00eam no cereal, principal fonte de alimento.<\/p>\n<p>&#8220;Demonstramos que o aquecimento global, as altera\u00e7\u00f5es clim\u00e1ticas e especialmente os gases de efeito estufa, como o di\u00f3xido de carbono, podem afetar o conte\u00fado nutricional do que comemos&#8221;, explicou Drewnowski.<\/p>\n<p>A prote\u00e7\u00e3o do meio ambiente representa tamb\u00e9m o cuidado com a sa\u00fade.
