Uma planta bastante cultivada pelo mundo, e presente em diversos pa\u00edses de clima quente. Em zonas rurais de pa\u00edses como \u00c1sia e \u00c1frica, os gr\u00e3os do sogro \u00e9 um dos mais importantes alimentos e pode oferecer energia, prote\u00edna, vitamina e minerais.<!--more--><\/p>\n<p>Uma equipe de pesquisadores do<a href=\"http:\/\/www.icytac.conicet.unc.edu.ar\/\" target=\"_blank\" rel=\"noopener\"> Instituto de Ci\u00eancia e Tecnologia de Alimentos de C\u00f3rdoba (ICYTAC)<\/a>, na Espanha, desenvolveu massas a base de sogro, como uma op\u00e7\u00e3o saud\u00e1vel para quem tem intoler\u00e2ncia ao gl\u00faten.<\/p>\n<p>Segundo uma das pesquisadoras, a doutora Mariela Bustos, \u201ctrata-se de um produto que poderia oferecer um sabor novo aos cel\u00edacos com um melhor perfil nutricional pelo alto conte\u00fado de fibra e a capacidade antioxidante\u201d, afirmou.<\/p>\n<p>Geralmente, os produtos que substituem as massas feitas de trigo cont\u00eam n\u00edveis baixos de minerais e fibras, e altos em gorduras. Este novo produto, a base de sorgo, oferece, segundo o projeto de pesquisa espanhol, vantagens nutricionais interessantes. Agora, a equipe busca empresas fabricante de alimentos dispostas a trabalhar em conjunto para produzir massas para a venda.<\/p>\n<p>Segundo estudos de laborat\u00f3rio, esta massa a base de sorgo mostrou menores n\u00edveis de a\u00e7\u00facar e maiores valores de polifen\u00f3is.<\/p>\n<p>As ind\u00fastrias alimentares j\u00e1 utilizam o gr\u00e3o em produtos como farinha, bebidas \u00e0 base de malta e cerveja, mas geralmente em pequenas quantidades.
