Por enquanto, o pre\u00e7o alto impede que seja consumido de forma mais extensiva, mas muitos padeiros v\u00eam optando pela farinha de trigo-sarraceno para fazer p\u00e3es sem gl\u00faten.<!--more--><\/p>\n<p>De acordo com o <a href=\"https:\/\/ndb.nal.usda.gov\/ndb\/\" target=\"_blank\" rel=\"noopener noreferrer\">Departamento de Agricultura dos Estados Unidos<\/a>, o trigo-sarraceno cont\u00e9m valores nutritivos muito similares ao trigo. Ambos fornecem praticamente a mesma quantidade de calorias para cada 100 gramas (340 kcal a farinha de trigo e 335 kcal a farinha de trigo-sarraceno), quase a mesma quantidade de prote\u00ednas e valores muito similares de vitaminas.<\/p>\n<p>O trigo-sarraceno tem um pouco mais de gordura, a\u00e7\u00facar e minerais, principalmente c\u00e1lcio, ferro, magn\u00e9sio, pot\u00e1ssio, s\u00f3dio e zinco.<\/p>\n<p>Por estas qualidades, acredita-se que este gr\u00e3o pode ser um \u00f3timo alimento para oferecer nutri\u00e7\u00e3o saud\u00e1vel, com efeitos antioxidantes. Por enquanto, h\u00e1 poucos estudos, mas o <a href=\"https:\/\/www.crea.gov.it\" target=\"_blank\" rel=\"noopener noreferrer\">Istituto Nazionale di Ricerca sugli Alimenti e la Nutrizione<\/a> vem analisando melhor estes benef\u00edcios.<\/p>\n<p>De acordo com o <a href=\"https:\/\/www.alimente.elconfidencial.com\/nutricion\/2020-10-31\/alforfon-trigo-sarraceno_1559063\/\" target=\"_blank\" rel=\"noopener noreferrer\">site Alimente<\/a>, a prepara\u00e7\u00e3o deste gr\u00e3o \u00e9 similar ao do arroz, e que se costuma comer junto com outros alimentos.
