O ciclo biol\u00f3gico de muitos alimentos est\u00e3o se alterando, o que provoca mudan\u00e7as tamb\u00e9m na qualidade, nos sabores e nos aspectos que t\u00eam os vegetais. Estas transforma\u00e7\u00f5es ocorrem como estrat\u00e9gia de sobreviv\u00eancia \u00e0s novas condi\u00e7\u00f5es.<\/p>\n<p>Algumas destas varia\u00e7\u00f5es podem resultar em frutas, verduras, legumes e leguminosas de pior aspecto e sabor. Por exemplo, as alfaces est\u00e3o ficando mais amargas devido ao estresse t\u00e9rmico. As eleva\u00e7\u00f5es de temperatura t\u00eam tornado cada dia mais desafiador o cultivo de algumas esp\u00e9cies de hortali\u00e7as que necessitam de clima mais ameno para alcan\u00e7ar seu pleno desenvolvimento. A alface, hortali\u00e7a folhosa com origem na regi\u00e3o do mar Mediterr\u00e2neo, tem sua produ\u00e7\u00e3o favorecida quando a faixa de temperatura oscila entre 15\u00baC e 25\u00baC.<\/p>\n<p>\u201cEssa caracter\u00edstica \u00e9 importante porque altas temperaturas antecipam o florescimento da alface e a produ\u00e7\u00e3o de l\u00e1tex nas folhas (veja quadro nesta mat\u00e9ria), o que deixa a planta com um sabor bem amargo, indesejado pelos consumidores\u201d, explica o agr\u00f4nomo F\u00e1bio Akiyoshi Suinaga, coordenador do programa de melhoramento gen\u00e9tico de alface da Embrapa.<\/p>\n<p>Por\u00e9m, segundo a pesquisadora do Instituto Agroalimentario de Arag\u00f3n, Aurora D\u00edaz, este sabor amargo representa \u201cmais lactonas, que s\u00e3o conhecidas como ibuprofenos naturais\u201d. Nem tudo s\u00e3o m\u00e1s not\u00edcias.<\/p>\n<p>Assim, diferentes institui\u00e7\u00f5es est\u00e3o pesquisando e desenvolvendo novas variedades de alimentos mais resistentes ao calor e ao estresse h\u00eddrico. Outra op\u00e7\u00e3o recomendada por D\u00edaz \u00e9 apostar pelas esp\u00e9cies silvestres, e conhecer melhor as propriedades que desenvolvem e permitem sobreviver \u00e0s mudan\u00e7as clim\u00e1ticas.<\/p>\n<p><strong>Altera\u00e7\u00f5es nos alimentos<\/strong><\/p>\n<p>Algumas frutas e verduras v\u00eam mostrando modifica\u00e7\u00f5es nos aspectos e sabores. Alguns exemplos s\u00e3o:<\/p>\n<ul>\n<li><strong>C\u00edtricos<\/strong> \u2013 A falta de \u00e1gua aumenta a acidez das frutas c\u00edtricas, diminuindo tamb\u00e9m a grossura da casca e deixando as frutas com aspectos mais p\u00e1lidos. Uma rea\u00e7\u00e3o positiva, entretanto, \u00e9 que algumas frutas reagem aumentando a quantidade de sorbitol, um edulcorante natural que favorece o crescimento de bact\u00e9rias ben\u00e9ficas para o intestino.<\/li>\n<\/ul>\n<ul>\n<li><strong>Ma\u00e7\u00e3s e peras<\/strong> \u2013 Estas frutas necessitam de temperaturas mais frias. Durante o desenvolvimento, algumas variedades v\u00eam mostrando uma flora\u00e7\u00e3o incompleta e perdem os frutos. O calor provoca nas frutas a redu\u00e7\u00e3o de antocianinas, que oferecem o tom vermelho das ma\u00e7\u00e3s e benef\u00edcios para a sa\u00fade humana.<\/li>\n<li><strong>Tomates<\/strong> \u2013 Com o calor, h\u00e1 menos p\u00f3len e menos flora\u00e7\u00e3o.
