Conseguiram estender a vida \u00fatil do caqui ao utilizar, para o processamento do fruto, uma t\u00e9cnica conhecida como alta press\u00e3o hidrost\u00e1tica (HHP por suas siglas em ingl\u00eas).<!--more--><\/p>\n<p>O caqui \u00e9 um alimento com alto valor nutritivo, fonte de antioxidantes porque cont\u00e9m carotenoides e taninos. Gra\u00e7as ao processamento com a t\u00e9cnica HHP, \u00e9 poss\u00edvel obter um produto muito mais est\u00e1vel e conservar os nutrientes do fruto, aumentando a capacidade antioxidante do produto final, em compara\u00e7\u00e3o com outros processos como a pasteuriza\u00e7\u00e3o.
